Buttermilk Pie

From Debbie: Just a little family history story here - that Buttermilk Pie recipe was one that Grandma Trick created. Remember when she and Pa Guy were first married, it was long ago and they had access to Buttermilk - lots of it - and they also didn't have air conditioning way back then and it was extremely hot in Arkansas and grandma Trick wanted a pie recipe she didn't have to heat the whole oven up for which would make the whole kitchen hot. So she invented her top of the stove recipe to our great delight, and it is now in it's 4th generation of use.
Grandma Trick
- 1/2 stick butter
- 2 cups buttermilk
- 1 cup sugar
- 4 tbs flour
- 3 egg yolks (beaten)(use whites for meringue)
- 1/2 tsp lemon juice
- Cooked pie crust
Melt the butter and cool. Add buttermilk and mix. Add sugar and flour and mix. Add egg yolks and mix. Cook until thick (really thick). Remove from heat and mix in lemon juice. Pour into the cooked pie crust and top with the meringue.

Same ingredients except:
- 3 eggs instead of 3 egg yolks
- 1 tsp vanilla
Melt the butter in a large bowl in the microwave. Add buttermilk, sugar, flour and eggs and mix well. Microwave on high for 4 minutes. Stir until smooth. Microwave on simmer for 4 minutes, and stir until smooth. Microwave 2 minutes on simmer and then stir until smooth. Repeat for 2 more minutes in the microwave. (12 minutes total in the microwave: 4 high, 4 simmer, 2 simmer, and 2 simmer). Add lemon juice and vanilla, and mix well. Pour into pie shell, cover with a plate (to keep the top from drying out) and store in the fridge. Donna says: "I like it without the meringue, sometimes might put whipped cream on it"
