Chicken Noodle Satay

From Pat and Kristin.

  • 8 oz package chinese noodles, cooked, rinsed, drained.
  • 1 lb chicken(John) or steak(Kristin and Pat), diced
  • 1/2 cup chopped scallions or green onions
  • 2 handfuls fresh snow peas(John) or a small package of peapods (Kristin and pat)
  • 1 red pepper, cut into small pieces
  • 1 can sliced water chestnuts(John)

Saute the chicken/steak. When it is almost done, add in the vegetables so they get hot, but don't lose their crunch. Mix meat&veggies, noodles, and peanut sauce in a large bowl. Great served hot immediately, or as cold lunch.
