Spinach Salad

From Mom.

  • Spinach, washed and ready to eat.
  • Turkey bacon, 1 piece per helping.
  • 1 tablespoon chopped pecans per helping.

Dressing

  • 1 cup balsamic vinegar.
  • 1/3 cup sugar, more to taste.
  • 1/4 dry pint raspberries.

First tear the spinach into small pieces into bowl, then add the turkey bacon crumbled in to small pieces and the pecans. I fry a pound of the turkey bacon and then keep it in the freezer. When making the salad I micro wave several strips of bacon so they are nice and crisp. Next add the dressing.

To make the dressing add the sugar to the balsamic vinegar and stir until the sugar is dissolved. Then chop the raspberries until they are almost mashed and add them to the vinegar and stir well. Pour in as much dressing as needed over the salad.
