Whipped Sweet Potatoes

  • 5 large sweet potatoes
  • 4 tablespoons butter
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoon vanilla
  • 3 tablespoons honey
  • 5 chipotle peppers in adobo sauce (canned)
  • 2 teaspoons orange zest
  • 1 cinnamon stick
  • 1 1/4 cup heavy cream

Bake sweet potatoes to fork-tender in a 400 degree oven. Remove skin and place pieces of sweet potato in mixing bowl, beat on medium. Add butter, cinnamon, vanilla, and honey. Beat until smooth. Chop four of the five peppers and blend in. Pour in 3 to 4 tablespoons of adobo sauce from the can. Put the remaining pepper in a saucepan with the orange zest, cinnamon stick and cream. Heat on low for 10 minutes. Discard cinnamon stick and pepper. Add cream to sweet potato mixture and incorporate slowly. Beat on a high setting until smooth.
